Ingrédients
  

  • 2 pieces Filet mignon Approximately 200-250 g each.
  • 2 tablespoons Olive oil For searing the meat.
  • to taste Salt For seasoning.
  • to taste Black pepper For seasoning.
  • 3 tablespoons Honey For the sauce.
  • 1 tablespoon Apple cider vinegar For the sauce.
  • 2 tablespoons Dijon mustard For the sauce.
  • 1 clove Garlic Minced, for the sauce.
  • to taste Fresh herbs Thyme or rosemary for garnish (optional).

Instructions
 

  • Remove the filet mignon from the refrigerator and let it rest at room temperature for about 30 minutes.
  • Season the filet mignon with salt and black pepper on both sides.
  • Heat olive oil in a skillet over medium heat. Once hot, add the filet mignon and sear for 3-4 minutes on each side for rare, or 5 minutes for medium.
  • Use a meat thermometer to check the internal temperature: 55°C for rare and 60°C for medium. Remove from skillet and let rest for a few minutes.
  • In the same skillet, add minced garlic and sauté for about 1 minute until golden.
  • Add honey, apple cider vinegar, and Dijon mustard to the skillet. Stir well and let simmer for 2-3 minutes until slightly thickened.
  • Slice the filet mignon into medallions and arrange on a serving platter. Drizzle the honey mustard sauce over the meat and garnish with fresh herbs if desired.
  • Serve immediately and enjoy!
